How to Grow Parsnips: Planting to Harvest
Sow parsnip seed 1/2 to 3/4 inch deep in rows 18 to 24 inches apart, expect germination to take 2 to 3 weeks, and thin seedlings to 3 inches apart once they’re established. Parsnips need 100 to 120 days to mature, so get seed in the ground about 2 to 3 weeks before your last frost, as soon as the soil is workable. Hold off on nitrogen fertilizer, which along with crowding is a named cause of forked, misshapen roots in an otherwise low-maintenance crop. Then leave the roots in place until the tops are frosted: two to four weeks near freezing is what develops the flavor.
How it works
Parsnip seed is slow and erratic to germinate compared to most garden vegetables. Seed can technically sprout at soil temperatures as low as 35°F, but it germinates and grows much faster once soil warms into the 50–70°F range, and cold soil stretches the wait well beyond the typical 2 to 3 weeks. That long window matters because the seed itself doesn’t keep: parsnip seed loses germination rate and seedling vigor rapidly after about a year in storage, so buy fresh seed each season rather than sowing last year’s leftover packet.
Once seedlings are up, root shape depends on two things Illinois Extension names specifically: crowding and nitrogen. Unthinned rows produce small, forked roots because the plants compete for space below ground. Excess nitrogen does something similar from a different angle — it pushes fast top growth at the expense of the root, leaving parsnips malformed, dwarfed, or forked. Fresh, un-composted organic matter worked in before planting is a separate route to the same misshapen roots. Water management plays a role as well: overwatering produces hairy roots, and swinging between wet and dry conditions causes cracking, slow leaf development, and bitterness. Consistent, not just plentiful, moisture is what the root wants.
What to do
Sow seed directly in the garden, 2–3 seeds per inch of row — the extra seed compensates for parsnip’s naturally uneven germination. Arkansas Extension passes along a common trick: drop a radish seed every inch along the row, and the radish comes up fast, marks the row, and helps break the soil crust for the slower parsnip seedlings underneath. Keep the soil surface uniformly moist through the multi-week germination period; a crusted or drying surface is one of the more common reasons a parsnip stand comes in thin.
Thin to 3 inches apart once seedlings are established — the middle of Arkansas’s and Illinois’s 2-to-4-inch range, and the tight end of Utah State’s wider 3-to-6-inch recommendation. Crowded rows are what produce the forked, undersized roots. If you log your parsnip bed in Arbor, it prompts the thinning task on time and tracks the date so you’re not guessing next season whether you thinned too early or too late.
Skip a nitrogen push unless a soil test says your ground is short. South Dakota State Extension recommends testing N-P-K before planting rather than fertilizing on a schedule; excess nitrogen buys foliage at the root’s expense. Water deeply and on a consistent schedule rather than heavily and irregularly — Utah State asks for irrigation that is frequent and uniform, since it’s the swings between wet and dry that crack roots and turn them bitter, not just insufficient water.
Leave roots in the ground until the tops are frosted in late fall — parsnip is a genuine winter vegetable, and its flavor isn’t fully developed until the roots have taken two to four weeks of near-freezing temperatures. After that, harvest and store the roots, or leave them in place under a layer of straw mulch and dig as needed through winter.
Watch for two recurring problems, both manageable without spraying and both shared with carrots — Cornell notes they’re grown much the same way and catch many of the same diseases and insects. Itersonilia canker (black canker) is the most serious parsnip disease — dark, sunken cankers form on the crown and shoulders of the root, and advanced infections let other organisms in to rot the whole root. It’s favored by cool, moist conditions around 68°F, and gets worse in poorly drained or acidic soil. Plant resistant varieties where available (Gladiator is named specifically), use raised beds or well-drained soil, keep root shoulders covered with soil through the season, rotate away from carrot-family crops, and start with certified disease-free seed — fungicide sprays are not effective, so harvest promptly at maturity rather than leaving crops in past their prime. Carrot rust fly is the other named pest, tunneling into roots and showing up as wilting, rust-colored foliage on young plants. Floating row covers work well, but only if they go on before the adult females lay eggs at the crown, which means covering the bed at sowing rather than after seedlings are up; cover a crop after the fact and you trap the larvae underneath instead of keeping them out.
Zone and season notes
In cold-winter zones like Cornell’s Eastern New York growing region, parsnips can stay in the ground under mulch and be harvested straight through winter into spring — but dig them before new top growth starts. Roots left in the ground too long in spring turn woody once the tops grow out; Cornell’s commercial harvest windows are April and May or October through December.
Arkansas Extension sows parsnips in early March or in August, timing the August planting so roots size up in fall and take their two to four weeks of near-freezing weather in early winter. In mild-winter zones that cold window is what you schedule around, not something to protect against.

In maritime and Pacific Northwest climates, carrot rust fly and Itersonilia canker are both documented as regional pressures, since cool, damp conditions favor the canker fungus. Oregon State puts the first generation of adults active from mid-April into June, with the second generation emerging in August and September and activity running into October — those are the windows a row cover has to beat. Keeping root shoulders covered with soil is the other named control, worth prioritizing here.
Utah State Extension, writing for the light soils common in Utah, does call for a nitrogen top-dress to keep plants growing: 1/4 cup of 21-0-0 per 10 feet of row six weeks after emergence, and again four weeks later. Treat that as calibrated to a specific regional soil rather than a default — on typical garden soil, added nitrogen is more likely to cause forked roots than to help.
