How to Grow Turnips: Spacing, Watering, and Harvest Timing
Direct-sow turnip seed 1/4 to 1/2 inch deep, 1-2 inches apart, in rows 12-30 inches apart, then thin to 3-6 inches between plants once true leaves appear. Water 1 to 1.5 inches per week, and pull root turnips at 2-3 inches across for the mildest, most tender flesh. How it works
Turnips are a fast, cool-season root crop, and most of what goes wrong with them traces back to two things: root disturbance and inconsistent water. The taproot doesn’t tolerate transplanting — moving a seedling damages the growing tip and causes the root to fork or branch instead of forming a single clean bulb, so turnips should always go directly into garden soil, never started indoors and moved, the same rule that governs carrots and other direct-sown roots. Once seedlings are up, thin them: University of Minnesota Extension puts final spacing at 3 to 6 inches depending on the root size you want, and roots left crowded stay small.
Sweetness comes from cold. A light frost pushes the plant to concentrate its sugars, which is why fall turnips often taste better than spring ones — Oregon State Extension notes the same effect in beets. The flip side is drought: University of Minnesota Extension states plainly that moisture stress “can make them bitter or woody.” A turnip that’s bitter isn’t a bad variety or an inherently strong-flavored vegetable — it’s almost always a root that dried out or sat in the ground too long past usable size.
What to do
Direct-sow seed shallow, an inch or two apart, and don’t skip the thinning step — crowded rows are a common cause of small, misshapen roots. Once true leaves show, thin to 3-6 inches depending on whether you’re growing standard slicing turnips or want smaller, quicker roots — a tighter final spacing of 3-4 inches works well for most home gardens and still lands inside that range. If you’re growing for greens as well as roots, harvest leaves lightly rather than stripping the plant: heavy, repeated cutting reduces the plant’s photosynthetic capacity and slows root sizing, so leave enough foliage on each plant to keep feeding the root. Oregon State Extension puts a full greens harvest at about 50 days after sowing, and thinnings pulled earlier are edible as baby greens.
Keep soil consistently moist — University of Minnesota Extension puts the target at 1 to 1.5 inches of water a week between rain and irrigation — with extra attention during the seedling stage and again as roots are actively sizing up, the two windows Clemson flags as most vulnerable to a dry spell. Go easy on nitrogen beyond a balanced pre-plant feed. Clemson and Colorado State University Extension both note that excess nitrogen pushes leafy top growth at the expense of the root, so test soil before feeding rather than applying a blanket fertilizer, and hold off on nitrogen-heavy feeding as roots approach harvest size. Clemson targets a soil pH of 6.0 to 6.5, and the same soil test is what tells you how much lime or sulfur it takes to get there.
Flea beetles show up on young seedlings as small dark insects that chew shot-hole pits in leaves; their larvae can also injure the roots directly, and turnips are named alongside radishes as a crop that’s particularly vulnerable to that root-feeding stage. Roots are ready at 2-3 inches in diameter. Turnips left in the ground past usable size turn woody and pithy, and a hard freeze damages the roots outright — a light frost is the only cold you want on them.
Zone and season notes
Turnips are brassicas, the same family as cabbage, and share that family’s cool-season preference. Clemson recommends mid-to-late August for South Carolina’s longer fall window, where spring turnips can also go in as early as April. University of Tennessee Extension frames the window as 6-8 weeks before first frost — the short end of that is under the 50 to 60 days a standard variety needs, so treat six weeks as a floor for fast salad types rather than a general rule. Prolonged summer heat reduces root quality, so a summer sowing is the one window worth skipping regardless of zone.
