How to Grow Peppers

Peppers need 8 weeks of indoor seed starting, warm soil at transplant time, and consistent moisture all season. Plant too early into cold ground and the plants stall — not die, but stall for weeks — while a neighbor who waited for 60°F soil pulls ahead before June. Get those timing and temperature basics right and the rest is maintenance.

How it works

Peppers are among the most heat-dependent vegetables in a home garden. They germinate poorly below 75°F and set fruit best with daytime temperatures of 70–80°F and nights above 55°F. Cold nights cause flower drop. Heat above 90°F causes fruit abortion — the plant abandons developing pods during a hot spell, then resumes once temperatures back off. This is not disease; it’s a stress response.

Blossom-end rot in peppers follows the same calcium-availability mechanism as in tomatoes: the calcium is usually present in the soil, but irregular watering prevents roots from taking it up. According to University of Missouri Extension, high ammonium nitrogen compounds the problem by competing with calcium uptake. The fix is watering consistency, not a calcium amendment.

Excess nitrogen is the other consistent mistake. A heavily nitrogen-fed pepper grows large and leafy, delays flowering, and produces fewer pods. University of Minnesota Extension and Utah State University Extension both flag this clearly: ease off nitrogen once flowering begins and shift toward higher potassium through the fruiting period.

What to do

Start seeds indoors 8 weeks before your outdoor planting date. Sow 1/4–1/2 inch deep in sterile soilless mix and maintain soil temperature at 80–85°F until seedlings emerge — a heat mat pays off here. Once seedlings emerge, drop to 65–75°F for grow-on. Pinch off any flower buds that form while plants are still indoors; early flowers on a seedling divert energy from root and stem development.

The target transplant is stocky and dark green, 5–8 inches tall with 6–9 mature leaves. Remove any flowers or small fruit before planting so the plant invests first in establishing roots.

Harden off for 1–2 weeks before transplanting. Start with a couple hours of sheltered outdoor exposure and increase gradually. Bring plants in if night temperatures are forecast to drop below 55°F. This step is worth the inconvenience — plants that skip hardening often stall for weeks even after the soil warms.

Soil temperature is the real transplant trigger, not the calendar. Aim for 2 weeks after last frost, but wait for at least 60°F at planting depth first, and 65°F is better. Set transplants at the same soil line they held in their pot — deeper risks stem rot. Space 18 inches between plants in rows 30–36 inches apart. Transplant in late afternoon or on a cloudy day, then water each plant thoroughly right after planting to settle the soil around the roots.

Water consistently. Aim for 1 inch per week at minimum, more during active fruiting or heat events. The method matters: use drip or soaker hoses when possible. Overhead watering splashes soil onto foliage and promotes bacterial spot, which spreads fastest under warm, wet conditions. Probe 2 inches down before watering; if it’s still moist, wait. If the surface looks dry and the forecast shows heat, water early. If fruit already shows blossom-end rot, pick off the affected pods and hold this steady rhythm — new fruit usually comes in clean once watering stabilizes. Skip the calcium sprays.

Lay mulch to hold that moisture, but only after soil temperature reaches 75°F — cold, wet mulch delays the soil warming peppers need through early summer.

Fertilize with timing in mind. Apply a balanced starter fertilizer at transplanting at the label rate. Once flower buds appear, back off nitrogen and move to a higher-potassium formula. Heavy top growth late in the season means nitrogen ran too long — the plant grew, but the fruit count dropped.

Harvest on time. Sweet peppers are fully edible at the green (mature) stage, about 70–80 days from transplant for bell types. Waiting 2–3 more weeks for full color change — red, orange, or yellow — adds sweetness and raises vitamin A and C content. Color change is a quality decision, not a safety requirement. Peppers marked by blossom-end rot or heat stress may look misshapen or carry a soft spot — cut away the damage and the rest is fine to eat. Always cut the stem with sharp shears rather than pulling, which breaks branches. At season’s end, harvest everything at mature green or beyond before the first frost.

Zone and season notes

Northern tier (zones 3–5, Minnesota and similar): Start seeds around mid-April to transplant late May through early June once nights are reliably above 50°F. With a 75-day average maturity, peppers planted in early June will be ready by mid-August, well before September frosts. For habanero types (90–120 days to maturity), this window is marginal — choose a short-season variety or accept a green harvest. Do not push the calendar into cold soil; a plant stalled two weeks in 50°F ground defeats the point of starting early indoors.

Mountain West (zones 5–7, Utah and similar): Utah State Extension recommends 1–2 inches of water per week — higher than the 1-inch Midwest baseline because dry Western air pulls moisture from soil more quickly. Hold off on organic mulch until soil reaches 75°F, which arrives later at elevation. Black plastic mulch warms soil and conserves water during the critical establishment period.

Warm-summer zones (8–10, Southeast and Southwest): Evenings above 75°F can reduce pod production, and fruit abortion is common during heat peaks above 90°F. Phytophthora blight — a soilborne disease that kills plants outright by rotting the stem at the soil line — is most prevalent in warm, wet regions with heavy soils. There are no effective chemical controls for home gardens; drainage, drip irrigation, and rotating away from other susceptible crops — tomatoes, eggplant, cucumbers, squash, and beans — for 4–5 years are the primary tools. Resistant varieties such as Aristotle, Declaration, and Paladin exist and are worth selecting in persistently affected gardens.

All regions: Peppers are frost-sensitive at 33°F. Count 75 days back from your average first fall frost to set the last practical transplant date. Any transplant after that cutoff is a gamble on a green harvest.
