Growing Swiss Chard: Spacing, Watering, and Harvest

Swiss chard matures in 50-75 days depending on variety, keeps growing through frost down into the mid-20s°F, and almost never bolts from summer heat the way spinach does. Direct-sow seed 1/2 inch deep 3 to 4 weeks before your last frost date, thin to 8 inches apart, and water 1-2 inches per week. It is one of the few leafy greens that tolerates a full summer in the ground without running to seed.

How it works

Chard is the same species as beets, bred for leaves and stalks instead of a root, and it shares beets’ biennial life cycle. It normally will not flower until it has been through a winter, so summer heat alone does not push it to seed the way it does spinach, which bolts under long daylength and warm temperatures (see bolting in lettuce and greens). The trigger runs the other way for chard: a hard cold spell on young plants can read as winter and start a flower stalk, which is why sowing well ahead of the 40°F soil minimum is the risk, not a hot July. Growth slows in real heat, but as long as the soil stays moist, chard keeps making leaves rather than bolting.

Temperature still sets the pace. Seed germinates starting at a soil minimum of 40°F, with an optimum range of 50-85°F and best results at 55-75°F; germination drops off above 80°F, and seeds typically take 7-14 days to emerge. Once established, chard grows best when air temperatures stay under 75°F, but it is not fragile at the other end: young plants aren’t seriously damaged down to 32°F, and established plants keep growing through frost until temperatures drop into the mid-20s°F. A light frost sweetens the leaves rather than harming them, which makes chard one of the better greens for stretching a harvest into late fall.

What to do

Sowing and thinning. Sow seed 1/2 inch deep, spaced about 2 inches apart. Direct-sow 3 to 4 weeks before your last frost-free date; if transplanting, set plants out right around that date. Each chard seed is actually a seed ball containing several embryos, so seedlings emerge in clusters no matter how carefully you sow. Thin to a final spacing once plants are about 2 inches tall. Extension guidance varies: Utah State says 6 inches apart with rows 12 inches apart, Alabama says 4-6 inches within rows, and Maryland calls for 8-12 inches if you want larger plants. Eight inches is a reasonable middle point for a home bed growing full-size leaves.

Watering. Water 1-2 inches per week, and keep it consistent rather than letting the bed dry out between waterings — moisture swings toughen the leaves, slow growth, and produce off-flavors. How deep the water goes depends on soil type: 1 inch of applied water wets sandy soil to about 10 inches, and loam or heavy clay to about 6 inches. Sandy soil holds less water between waterings, so water sandy beds more often and more lightly, and mulch to buffer moisture.

Fertilizing. Chard has a high nutrient demand for a leafy crop. Incorporate compost or a balanced fertilizer before planting, then side-dress once plants are established — roughly 2 weeks after transplanting or 4 weeks after direct-sowing, placing fertilizer 4-6 inches from the stem. Without a soil test, an all-purpose 8-8-8 or 10-10-10 at planting works, applied per label directions; a nitrogen-focused side-dress of 1/4 cup of 21-0-0 per 10 feet of row about 4 weeks after transplanting or thinning pushes faster leaf growth, a bigger payoff here than for most vegetables, since leaves are the entire harvest.

Harvesting. Outer leaves come off first, broken or cut near the base without damaging the inner leaves or the central growing point, and the plant keeps producing over a long season. Leaves are best picked just fully expanded or slightly before. Harvest early or late in the day — leaves wilt fast once cut on a warm day in full sun. A 10-foot row typically yields 8-12 pounds over a season. Stored chard holds best at 32°F and 85-95% relative humidity.

If you log a harvest note like “cut chard, leaves getting large” in Arbor, it uses that to time the next outer-leaf harvest instead of leaving picking to guesswork, which matters for a cut-and-come-again crop where waiting too long between harvests means tougher leaves than you wanted.

Watching for leafminers. Spinach and beet leafminers show up more often on chard than on spinach itself. Adults are small gray-to-brown flies about 1/3 inch long; they overwinter as pupae in the soil and emerge in April-May to lay clusters of 4-8 bright white eggs on leaf undersides. Both are blotch leafminers: the damage shows as irregularly shaped mines inside the leaf, each holding a whitish, cone-shaped larva. Larvae feed for 2-3 weeks before dropping to pupate, and the full cycle runs 30-40 days with 3-4 generations per season. Row covers placed before egg-laying begins in April exclude the females, but they won’t help if leafminers infested that soil the previous year — the pupae are already inside the covered area. If a planting gets heavily mined, put any follow-up planting this season — and next season’s bed — somewhere else in the garden, then cover it.

Zone and season notes

Humid and rainy-summer regions. Cercospora leaf spot, caused by the fungus Cercospora beticola, is a bigger risk here than in arid climates. It’s favored by rainy weather or overhead irrigation, daytime temperatures of 77-95°F, nights above about 60-61°F, and relative humidity of 90-95% or free moisture sitting on the leaves — conditions common in mid-Atlantic, Midwest, and Northeast summers. Watch for small, roughly circular tan-to-light-brown spots with a reddish or purple border that turn gray as the fungus sporulates and merge as the disease progresses. The pathogen survives in leaf debris for up to 2 years, on contaminated seed, and on related goosefoot-family weeds such as lambsquarters, goosefoot, and pigweed, which act as alternate hosts. Manage it with clean seed, resistant varieties where available, a 2-3 year rotation away from beets and chard, distance from the previous season’s beet or chard ground, weed control on those hosts, and prompt cleanup of crop debris after harvest; fall tillage also cuts down on carryover.

Cold and dry-summer regions. Chard’s frost tolerance and slower disease pressure make it one of the more forgiving greens for stretching a season on both ends — sow as early as soil hits 40°F in spring, and leave the last planting in the ground through fall frosts rather than pulling it at the first cold snap.
