How to Grow Watermelon
Watermelon needs full sun, soil above 65°F to germinate, at least 85 frost-free days, and more room than almost any garden vegetable — set plants 36 inches apart with rows 6 feet apart and give standard vines 10–20 feet to run. Unlike peaches or tomatoes, its sugar is fixed at harvest: a melon cut two days early stays bland no matter how long it sits on the counter. Get the timing right; get it wrong and nothing recovers it.
How it works
Watermelon is a true heat crop. It needs a long stretch of warm weather to build the canopy that powers fruit development, then several more weeks for sugar to accumulate in the maturing flesh. The plant is killed outright by frost at 33°F and is stunted by cool soil — it will sit and struggle until the ground reaches 65°F, burning days it cannot afford.
Watering changes logic at the end of the season: what is correct through most of the plant’s life is wrong in the final ripening window. Watermelon has high water demand through most of its life, but excess moisture in the final ripening phase dilutes sugar, causes a bland, white-fleshed condition called white heart, and can crack the fruit open. Multiple extension programs confirm the same principle: pull back on irrigation once the fruit has reached near-final size. Less water late concentrates sweetness; more water at that stage does the opposite.
Seedless watermelons add a planting requirement. They are triploid hybrids that produce no viable pollen of their own — every seedless variety needs a standard seeded (diploid) variety planted nearby as a pollen source. Without a companion plant, flowers receive bee visits but fruit will not set. Plant one row of a seeded variety for every 2–3 rows of seedless.
What to do
Site and spacing. Watermelon needs full sun and more room than most gardeners expect. Space plants 36 inches apart in the row with rows at least 6 feet apart — standard vines run 10–20 feet by midsummer. Choose the most open, south-facing part of the garden. Work compost into well-drained soil before planting.
Timing. Do not plant until the soil reaches 65°F and all frost risk is past. Transplants go in 2 weeks after last frost; direct seeding works in the same window, planting 2–3 seeds per hill at 1 inch deep. In zones 3–5, direct seeding rarely leaves enough heat to reach maturity — start transplants indoors 3 weeks before last frost instead.
Row covers over newly set transplants warm the soil and shield young plants from cucumber beetles in the early weeks. Remove them when flowers open so bees can reach the blooms.
Watering. Established plants need deep watering every 4 days under normal conditions. Deep and infrequent beats shallow and frequent — watermelon roots push down when they have to, making the plant more resilient through heat. Drip irrigation is the best delivery method: it keeps foliage dry, which limits powdery mildew and other leaf diseases. When temperatures climb past 95°F, water every 3 days. Once fruit reaches near-full size, ease back on water to let sugars concentrate rather than dilute.

Fertilizing. Feed with a high-nitrogen fertilizer during vegetative growth. Watermelon needs a large canopy to support fruit development, and nitrogen builds it. Once fruit sets, switch to a high-potassium fertilizer. Potassium drives sugar accumulation in the maturing fruit; continued nitrogen after fruit set pushes more vine instead.
Vine and fruit management. Limit each plant to 2–3 main vines by removing extra side shoots early in the season. Pull off small or late-setting fruits that won’t have time to mature before season’s end — leaving them on redirects resources away from the melons most likely to ripen well. Count backward from your average first fall frost using the days-to-maturity on the seed packet; any fruit that set fewer than that many days out is unlikely to ripen, so remove it. Remove any deformed or diseased fruit as soon as you notice it. Do not prune when vines are wet, as cutting spreads disease through open wounds.
Knowing when to harvest. Start checking 5–6 weeks after flowering. No single test is reliable on its own — use these four indicators together, and trust the conclusion only when at least three agree:
- Ground spot: the skin patch resting on soil changes from pale white or light green to creamy yellow at full maturity.
- Tendril: the small curling tendril on the same stem node as the fruit turns brown and dry.
- Skin surface: loses the bright sheen of an unripe melon and becomes dull, slightly rough to the touch.
- Thump test: a ripe melon returns a dull, hollow sound; an immature one gives a higher, metallic ring. Use this to confirm what the other three suggest, not to lead the call.
Cut the fruit with a few inches of stem rather than pulling.
Zone and season notes
Direct seeding is standard practice in zones 8–10, where large standard varieties averaging 85 days to maturity have time to develop fully and the long hot season builds real flavor.
In zones 6–7, transplants give a meaningful margin. A warm summer ripens standard varieties reliably; a cool, wet one will not. Heat accumulation between fruit set and harvest determines flavor — a cool season is a biological ceiling, not a care failure.
In zones 3–5, watermelon is possible but cantaloupes are a more reliable bet for short-season gardeners. If you want to try watermelon, use only 65–75-day short-season varieties, start transplants indoors 3 weeks before last frost, and treat black plastic mulch as required — it warms the soil and extends the effective growing window meaningfully. Even with good technique, a cool August in these zones can leave fruit undeveloped.
Any zone: watermelon tissue dies at 33°F. If fall frost is forecast before your fruit ripens, harvest what is on the vine rather than waiting for the weather to improve.
